Nestled in the rolling fields of Ästad Vingård (one of Sweden's largest vineyards), the ÄNG restaurant is like a solitary diamond.

ÄNG餐厅坐落在Ästad Vingård(瑞典最大的葡萄园之一)起伏的田野中,就像一颗孤独的钻石。

ÄNG Restaurant was designed by Norm Architects and implemented by Karimoku Japan. This partially underground Michelin-starred restaurant has a spectacular greenhouse glasshouse entrance in the middle of lush fields, and as one enters the space, the place delivers an extraordinary gastronomic experience - creating an exciting interplay between architecture, food, wine, interior design and art, making the 19 course haute cuisine experience balanced and harmonious and appealing to all the senses.

The ÄNG restaurant experience begins even before one steps inside - through lush fields, winding paths flanked by crops and grasses lead one to the sparkling glasshouse of the Conservatory, a modern and sophisticated interpretation of a greenhouse. The interior of the building is made of iron and stands like a prism in the middle of the field, perfectly sharp and smooth and mirroring its surroundings.

This ÄNG restaurant is a new establishment, named after the surrounding fields, which explores both the surface and deeper parts of the Swedish landscape, as the surface view of the wetlands adds more comfort and reassurance.

Close to the conservatory glasshouse, there is a small herb garden at the front that showcases the local flavours and culinary experiences that guests are about to have. Protective hedges allow for glimpses of the nearby lake, but also focus attention on where it is located.

As one pulls open the heavy glass doors and moves on, the flagstones outside continue into the interior of the space, a subtle sign of the ÄNG restaurant's strong connection to the natural world.

The glass house gives the impression of lightness and lushness as one walks through an open kitchen with a grounded stone counter and customised artwork employing an organic language of forms.

As one sits in solid wood lounge furniture crafted by Karimoku of Japan, featuring visible woodwork details and soft upholstery, there is still a sense of sitting in the middle of a field with nothing but clear skies overhead, and it is clear that the space focuses on the interplay between nature and culture and captures the spirit of a unique place.

Seven wood and stone sculptures with an organic design language were customised by the talented Norwegian artist Anders Pfeffer Gjengedal (Løvfall). Inspired by his years in the world of ballet, he collaborated with architects and designers to transform natural wood and stone into sensual and expressive sculptures using a sense of form.

As the staff begin pouring locally sourced champagne and presenting stunning hors d'oeuvres made from local produce, guests can sit back and simply enjoy this 4 or 5 hour respite from the hustle and bustle of everyday life, while overhead the sun is slowly descending over the fields, serving as a calm and ever-changing backdrop to the approaching evening.

With a shared belief in timeless aesthetics and an ambition to create products that fulfil everyday needs, Norm Architects began collaborating with design studio Bonni Bonne to create a curated collection of products.Bonni Bonne, based in Norrland, Sweden, was born out of a shared passion and fascination for nature, food and everyday aesthetics.Bonni Bonne has the ambition to highlight some of Norrland's traditions in a new context, to present genuine craftsmanship and ancient knowledge in a more contemporary way, and to create products for everyday needs in a poetic and timeless aesthetic encounter.

To emphasise the strong connection between ÄNG's restaurant and nature, part of the selected collection is made of green wood, an ancient method of wood processing that creates natural contours and original grains that are perfect for the restaurant's ambience.

Selected natural materials, such as the pure oak of the bespoke furniture programme and the elegant stone flooring, have been slightly refined or processed to make them even more sophisticated - just like Chef Filip Gemzel's refinement of the locally sourced ingredients that make up the astounding 19-course menu.

When it comes to fine dining, it's all about the interplay between the many elements that make up the experience - from architecture, design and lighting, to flavours, smells and sounds. When all of these elements are balanced and well aligned, that's when it all comes together to create a unique, revered and distinctive experience that is outside the norm.

The integration of thoughtful artwork and sculptures is therefore an important part of the interior and ambience of the ÄNG restaurant. The customised artwork provided by Danish designer Sara Martinsen was a perfect collaboration, adding warmth and a new element of excitement to the space.

Sara Martinsen also believes in the power of natural materials for beauty, craftsmanship and strong visual storytelling. She arranges the use of locally sourced materials so that they become inspiring and people can experience each of their specific characteristics. She finds inspiration in the source, such as a beautiful material, a specific craft or the local history of a particular location, which is why she looks to the forests surrounding the ÄNG restaurant for inspiration for the materials that will later make up the tactile artwork.

As night falls, guests will be led to a hidden lift, temporarily ending the bright summer evening, which slowly escorts people underground and will step into a dark, tomb-like wine cellar featuring the restaurant's own sparkling wines as well as high-end brands from France.

As the sommelier leads the way through the impressive wine racks to select wines for the next part of the dinner, guests will also catch a glimpse of a quiet, dark lounge in the middle of the space, and get the impression that there are many more mysterious experiences to come.

To emphasise the transition from one atmosphere to another, the tiles are cut into a brick floor to create a cellar-like cave-like feel, and as guests step into the main dining room, they are met with a wooden floor from Dinesen in Denmark, which provides a view of a natural lake and rich fauna in the surrounding area. The environment once again becomes bright and breezy, and one's senses are alert and ready for the next part of the dinner experience.

Inspired by the transcendent beauty of Japan's Kushansui, Norm Architects travelled to Växjö to collect ready-made natural sculptures from a huge quarry. One of the key aesthetic principles behind these landscaped gardens is yohaku-no-bi, which means ‘the beauty of empty space’.

日本枯山水因其超凡脱俗的美而闻名,受到启发,Norm Architects来到韦克舍,从一个巨大的采石场收集现成的自然雕塑。这些景观花园背后的一个重要美学原则是 yohaku-no-bi,意思是“空白空间的美”。

Learning from the now-deceased legend, Japanese stone sculptor Masatoshi Izumi, Norm Architects also saw the raw beauty of stone and realised that the sculpture was already there - one just had to look for it.

Now, as one walks out of the dark wine cellar and through a huge swinging wooden door into the main dining room, the characterful stone sculptures act as tiny interpretations and analogues of the surrounding landscape and welcome guests.

The open kitchen shelves are filled with sculptures and ceramics curated by Viki Weiland and Ulla Bang, adding a personalised and warm ambience to the striking space - creating a strong coherence between food, art, design and architecture.

Potter Ulla Bang is known for her beautiful, hand-built stoneware pieces. Her work is created using ancient pottery techniques, drawing inspiration from forms and shapes found in everyday life. Her work is organic and free-flowing, but also precise and nuanced, as she likes her work to challenge balance, to be free and unexpected in form, but always with a fine focus and precise boundaries to end the creation.

Viki Weiland hand polishes and glazes all of her designs. Her style is simple, natural and raw, but with a focus on quality, materials and details. In the beginning, she only used tighter shapes, but over time she began to prefer curvier but simpler shapes. Craftsmanship has also evolved, but for her it has always been about creating sustainable and personal products.

As night falls and nature's colours become more vibrant, the colours of the materials chosen for the dining room seem to change. The oak acquires a reddish hue, and the open kitchen created from grey stone appears softer.

The whole experience ends in the evening when people return to the greenhouse glasshouse, where the sun has gone down and dessert has been served.ÄNG Restaurant is truly a place where guests and staff alike can explore, learn, connect and create memories.

傍晚时分,人们回到温室玻璃屋,太阳已经下山,甜点已经上桌,整个体验就在这里结束了。ÄNG餐厅确实是一个让客人和员工都能探索、学习、交流和创造回忆的场所。
